When using honey in many applications such as drinks, vinaigrettes and dipping sauces getting the honey to dissolve can be a frustratingly stick mess. Enter the honey syrup. Like standard simple syrup it is made with one part honey and on part water. Bring it to a simmer, and then cool. You’re done. The honey syrup will stay good in your fridge for months and it will be there the next time you want to make your favorite cocktail. Mine is the “Honey of a Margarita”
