Bee Raw

Raw honey is a chef’s secret weapon—golden crusts, caramelization, moist textures and complex notes are just a few of its hidden talents. Why honey instead of processed sugar? Besides the proven health benefits, each honey’s flavor varies with the flower from which it came. Imagine the subtle hint of sage in Sage Honey Stuffing, citrus in Orange Blossom Honey and Pheasant, and earthy Buckwheat Honey Pumpkin Pie. I’m hungry already.

Try these honey recipes, share them with friends and family—and enjoy them.

Nature Conservancy Bee Raw Blessed Honeycombs

Recipes >

Bee Raw is teaming up with Nature Conservancy magazine for an invitation only-event at Michael’s New York to celebrate the publication’s shift to a bi-monthly and accepting advertising for the first time. The evening will feature a special cocktail, Nature Conservancy’s Bee Raw Blessed Honeycomb, using Bee Raw honey and created by Michael’s mixologist Ektoras Binikos. The inspiration for the cocktail’s name (recipe below) is in one of the ingredients: cardamaro vino amaro from Italy is a spirit made from the blessed thistle.

Ingredients

  • 1 ½ oz. Uncle Val’s Gin
  • 1 oz. Solerno
  • 1 oz. lemon juice
  • 1 oz. Basswood Honey Syrup.
  • ½ oz. egg whites
  • 3 drops Bergamot bitters
  • 2 sage leaves

Instructions

  1. To create the honey syrup, mix one part Basswood Honey with one part water in a saucepan, bring to a simmer and then cool.
  2. Place all ingredients in a martini shaker with ice and shake well. Strain into a coupe glass and garnish with a lemon twist and a few (2-3) drops of the aromatic bitters.
